Flavour The mouthfeel is smooth, creamy and extremely balanced. On the palate, layers of intense umami and a lively, oil-like sweetness, in which a striking balance between the savoury maturation and a lively structure of the melting fat emerges. The purity of the diet supports the richness beautifully, in which the nuances of de Bellota linger long and harmoniously.

Finish An exceptionally long, crystal-clear finish. The nutty notes slowly fade away and make way for a clean memory of the Spanish sun and a refined, silky-smooth finish.

Serving tips & pairings

• Slicing: Always use a special ham holder (jamonero) and a long, flexible knife. Slice the ham into wafer-thin slices of 3-5 cm. The art is also to include a small edge of the white fat for the lively tasting experience.

• Temperature: Serve at room temperature (22-24°C). The fat should begin to glisten; that is the sign that the aromas are lively and the ham melts on the tongue.

• Drink: A sublime partner for a dry Sherry (Fino or Amontillado), a glass sparkling Cava of a robust Brouwhoeve beer.

• Store: Store the ham in a cool, dry place. Cover the cut surface after use with the previously removed fat edges and a clean cloth to prevent drying out.

• Feature: Pata Negra (black hoof); 100% pure-bred; Rich on healthy fatty acids; 7 to 8.5 kg pure craftsmanship.

What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.
