The Jamón de Cebo is considered by connoisseurs to be the sweet spot for anyone seeking the superior texture of the Ibérico pig in a milder flavour variant. Marked with the official White Label, this ham offers a crystal-clear balance between quality and accessibility. What makes this hand-sliced 100 gram pack special is its crystal-clear expression of craftsmanship; the Cortador slices the ham into short, bite-sized slices that contain precisely the right amount of fat marbling. This is a delicacy that brings the lively atmosphere of an authentic Spanish tapas bar directly to your drinks table.

At Brouwhoeve, we appreciate this ham for its honest character and silky-smooth mouthfeel. The pigs are carefully fed with a selection of grains and pulses, which results in a balanced flavour that never dominates. This is a product that shows a basic Ibérico ham can have a lively and exclusive character when it is prepared with care and by hand. The minimum maturation of two years provides a significantly fuller experience than standard Serrano ham, in which the natural minerality of the meat comes forward beautifully.

Flavour & character

Aroma A fresh and enticing bouquet. Immediately recognisable are the sparkling notes of dried meat and mild grains, beautifully complemented by aromas of light spices and the characteristic, pure nose of the maturation rooms that the nose pleasantly stimulates.

Flavour The mouthfeel is smooth, creamy thanks to the intramuscular fat and extremely balanced. On the palate, layers of mild umami and lively softness emerge, with a striking balance between savoury maturation and a lively, melting structure. The purity of the Ibérico breed supports the richness beautifully, with meaty nuances that linger long and harmoniously.

Finish A medium-long, crystal-clear finish. The savoury notes slowly fade away and make way for a clean memory of pure craftsmanship and a refined, silky-smooth finish.


Serving tips & pairings

  • Temperature: Crucial for hand-sliced ham! Remove the packmaturation from the refrigerator at least 30–60 minutes before serving. The slices should glisten and the fat should be slightly translucent, activating the lively aromas.

  • Presentation: Serve the hand-sliced slices on a white, optionally slightly pre-warmed plate. Do not place them too close together so that they can breathe.

  • Drink: An excellent partner for a cold glass Brouwhoeve Pilsener, a young white wine or a fresh Sherry (Fino).

  • Combination: Serve with the Picos de Pan and a good olive oil such as the Beniqueis for the complete experience.

What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.

Consumption & storage advice

Serving: For the best tasting experience, it is essential to remove the packmaturation from the refrigerator 15 to 20 minutes before consumption and let it come to room temperature (approx. 22°C). This allows the aromas to be fully released and gives the fat the right shine and softness.

Storage advice: Because this product is hand-sliced and vacuum-packed, we recommend storing it refrigerated to guarantee the freshness and quality of the Sierra de Aracena for as long as possible.

Presentation: Packed in a 100 gram blister, the perfect quantity for an immediately enjoyable high-quality portion.
