Flavour The mouthfeel is smooth, creamy from the fat and extremely balanced. On the palate, layers of intense meat flavour and a lively, oil-like sweetness emerge, with a striking balance between savoury maturation and the lively structure of the marbling. The purity of the diet supports the richness beautifully, with acorn nuances that linger long and harmoniously.

Serving tips & pairings
Temperature: crucial! Remove the packmaturation from the refrigerator at least 30–60 minutes before consumption. Serve at room temperature (approx. 22°C) until the fat is slightly glossy and translucent; then the ham is lively and at its best.
Presentation: Gently separate the slices and place them on a slightly pre-warmed plate to the aromas extra to activate.
Drink: The perfect partner for a dry Fino or Manzanilla sherry, a cold glass Brouwhoeve Blond beer of a sparkling Cava.
Combination: Serve neat or with the Picos de Pan(Spanish dipstokjes) and a good olive oil such as the Beniqueis.

What is the difference between Jamón and Paleta?
The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder).
A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone.
