Aroma A rich and enticing bouquet. Immediately recognisable are sparkling notes of mild acorns and matured meat, beautifully complemented by aromas of field herbs and the characteristic warm scent of a natural ageing cellar that pleasantly stimulates the nose.

Flavour The mouthfeel is smooth, very creamy and extremely balanced. On the palate, layers of mild umami and lively, oil-like sweetness appear, with a striking balance between the soft marbling and a vibrant, melting structure. The purity of the Ibérico breed supports the richness beautifully, while the Bellota nuances linger for a long time.

Finish A long, crystal-clear finish. The buttery and nutty notes slowly fade away, giving way to a clean memory of the dehesa and a refined, silky-smooth finish.

Serving tips & pairings

• Temperature: The most important step! Take the ham out of the fridge 30 to 60 minutes before serving. Open the pack and allow the ham to breathe at room temperature. When the fat turns translucent and the slices separate easily, the ham is lively and full of flavour.

• Presentation: Fan the slices out on a white plate. The uniform cut creates a neat, professional presentation.

• Drink: An excellent partner for a cold glass of Brouwhoeve Blond, a dry Manzanilla sherry or a fruity red wine.

• Combination: Delicious with a few Picos de Pan and a few drops of Arbequina Olive Oil.

What is the difference between Jamón and Paleta?

The main difference lies in the cut: Jamón comes from the hind leg of the pig, while Paleta comes from the front leg (shoulder). 

A Jamón is larger, matures for longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially prized for its more intense, powerful flavour because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller occasions.
