The 100% Ibérico Paleta de Bellota from Brouwhoeve is an ode to the power of the Ibérico pig. Because the shoulder is smaller and the bone structure complexer, salt and ambient air penetrate more quickly to the core of the meat.

The 100% Ibérico shoulder ham is considered the sweet spot for anyone who loves a powerful and aromatic piece of meat. Because the ratio between fat and meat in the shoulder is more favourable for flavour transfer, every slice offers a crystal-clear balance of savouriness. What makes these whole shoulder hams special is their crystal-clear expression of the Montanera; the pigs use their front legs intensivelyly while formaturation for acorns, What makes the muscle structure lively and well marbled. This is a delicacy that brings the lively energy of the Spanish dehesa to your kitchen in a compact and powerful way.

At Brouwhoeve, we appreciate the Paleta for its characterful profile and the silky-smooth mouthfeel that is released faster than with larger hams. This is a product that shows a shoulder ham can have a lively and gastronomic character, in which notes of sweet acorns and dried fruits blend beautifully with the rich, oil-like structure. The combination of 100% pure-bred genetics and artisanal maturation of at least two years provides a significantly fuller experience than regular shoulder ham. The Paleta is also quicker to consume, which benefits the freshness of the cut surface.

Flavour & character

Aroma A rich and enticing bouquet. Immediately recognisable are the sparkling notes of game spices and intense roasted acorns, beautifully complemented by aromas of matured fat, earth and the characteristic, savoury nose of the mountain air that the nose pleasantly stimulates.

Flavour The mouthfeel is smooth, very creamy and extremely balanced. On the palate, layers of powerful meat flavours and a lively, oil-like sweetness emerge, with a striking balance between intense maturation and a lively structure of intramuscular fat. The purity of the acorn diet supports the richness beautifully, with de Bellota nuances that linger long and harmoniously.

Finish A long, crystal-clear finish. The savoury and nutty notes slowly fade away and make way for a clean memory of the dehesa and a refined, silky-smooth finish.


Serving tips & pairings

  • Slicing: Please note, the slicing of a Paleta is more challenging than Jamón by the form of the shoulderblad. Use a good securely fixed holder and a sharp, narrow knife. Slice short, wafer-thin slices.

  • Temperature: Serve at 22-24°C. On this temperature begins the fat to 'zweat' and bereikt the Paleta its lively flavourpoint.

  • Drink: An excellent partner for a firm glass Brouwhoeve beer, a firmly white wine (bijvoorbeeld an on wood aged Verdejo) or a classic Sherry.

  • Moment: Ideal for smaller gatherings or hospitality venues that want a shorter turnover time while still offering the highest quality.

  • Feature: Black Label (100% Ibérico); Front leg; Rich on unsaturated fatty acids; 4,5 to 6 kg neat character.


What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.

Consumption & storage advice

Store: Whole pieces on a cool, dry place store. Remove the transportpackmaturation (hoes) immediately after receipt.

Serving: For the best experience, serve at room temperature (approx. 22°C) serve. The Paleta is more intense in flavour and has slightly more fat marbling than the ham, which provides a melting texture.

Tip: A skouderham (paleta) is by the bone structure slightly more challenging to on to slice than ham. Use a sharp knife and first remove the outer rind and the overtollige fat.
