DOP Jabugo Summum: the intensity of the shoulder

The Paleta de Bellota from Jabugo is considered the sweet spot for anyone who does not want to wait for the longer maturation of a ham, but does demand the highest achievable quality. Only the shoulders that receive the coveted "Summum" status from DOP Jabugo meet the strictest criteria for breed purity and acorn intake. What makes these whole shoulder hams special is their crystal-clear expression of terroir; the pigs were able to forage peacefully in the cork oak forests, which results in a lively, deep flavour.

At Brouwhoeve, we appreciate this Jabugo Paleta for its monumental flavour and the silky-smooth mouthfeel. The maturation takes place in natural bodegas, where the windows are still manually opened and closed to regulate the mountain air. It is a product that shows a shoulder ham can have a lively and aristocratic character, in which the complex notes of nuts, spices and ripe fat blend beautifully with exceptionally low salinity. The combination of the small format and intensive maturation provides an impressive depth.

Flavour & character

Aroma A rich and enticing bouquet. Immediately recognisable are the sparkling notes of roasted almonds and game thyme, beautifully complemented by aromas of dried vijgen, earth and the characteristic, deep nose of the Jabugo-cellars that the nose pleasantly stimulates.

Flavour The mouthfeel is smooth, exceptionally creamy and perfectly balanced. On the palate, layers of intense umami and a lively, oil-like sweetness emerge, with a striking balance between powerful maturation and the lively structure of the melting fat. The purity of the 100% Ibérico breed in combination with the DOP guarantee supports the richness beautifully, with de Bellota nuances that linger extremely long.

Finish An exceptionally long, crystal-clear finish. The rich fruit notes and melting fat slowly fade away and make way for a clean memory of the Sierra and a refined, silky-smooth finish.


Serving tips & pairings

  • Slicing: The Paleta requires to geduld. Use a professionele holder and a very sharp, narrow knife to the shoulderblad heen to slice. Slice wafer-thin slices or maximaal 4 cm long.

  • Temperature: Serve at 24°C. At this temperature "zweet" the ham its lively oleic acid from, which is essential for the tasting experience.

  • Drink: A sublime partner for a dry Manzanilla-sherry, a cold glass Brouwhoeve Blond of a complex white wine with houtrijping.

  • Combination: Serve with Picos de Pan and eventueel wat organic Beniqueis olive oil to ultimate proeverij.

What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.

Consumption & storage advice

Store: Whole hams on a cool, dry place store. Remove the transportpackmaturation (hoes) immediately after receipt.

Serving: For the best tasting experience, serve at room temperature (approx. 22°C) serve. Slice wafer-thin slices to optimum texture.

Tip: Because of its shoulder blade structure, a Paleta has a slightly more complex bone structure than hind-leg ham. Use a sharp knife and first remove the outer rind and yellow fat before slicing the fine slices.
