The Ibérico Jamón Cebo de Campo from Brouwhoeve is an ode to freedom of movement and natural maturation. Where standard Cebo hams remain indoors, the free-range life of these pigs provides impressive suppleness in the muscle structure and a deeper colour of the meat. 

This results in an imposing leg with a recognisable silky-smooth feel thanks to the excellent fat marbling. The combination of healthy open air and careful maturation of almost three years provides the ultimate balance between powerful meat flavour and a lively, creamy finish.

¨What is the difference between Jamón and Paleta: Jamón is the hind leg of the pig and offers a subtle flavour with a high meat yield by the longer maturation. The Paleta is the smaller front leg that matures faster and has a more intense, more powerful flavour.¨

The Jamón Cebo de Campo with the official Green Label is considered by connoisseurs to be the sweet spot for anyone seeking the superior quality of the Ibérico pig with a lively and robust character. Because the pigs use their muscles intensivelyly while formaturation in the open air, a crystal-clear marbling emerges that glistens beautifully at room temperature. What makes these whole hams so special is their crystal-clear expression of authenticity; the slow maturation in the mountain air gives the meat a lively depth that you rarely find in hams from intensively farming.

At Brouwhoeve, we appreciate this ham for its generous, honest profile and the silky-smooth mouthfeel. The fat is rich in healthy unsaturated fatty acids, giving it a melting point that perfectly matches body temperature. It is a product that shows an Ibérico ham can have a lively and gastronomic character, in which savoury umami notes blend beautifully with a mild, almost sweet finish. Flavour & character

Aroma A rich and enticing bouquet. Immediately recognisable are the sparkling notes of dried field herbs and matured meat, beautifully complemented by aromas of roasted grains and the characteristic, pure nose of the Spanish mountain air that pleasantly stimulates the nose.

Flavour The mouthfeel is smooth, creamy and extremely balanced. On the palate, layers of mild umami and a lively softness, in which a striking balance between the savoury maturation and the lively, smooth fat structure emerges. The purity of the Ibérico breed supports the richness beautifully, with meaty nuances that linger long and harmoniously.

Finish A long, crystal-clear finish. The savoury notes slowly fade away and make way for a clean memory of the free-range nature and a refined, silky-smooth finish.


Serving tips & pairings

  • Ritual: Place the ham in a sturdy holder. Slice wafer-thin slices just large enough to be enjoyed in one bite. The fat should be translucent at the edges.

  • Temperature: Serve at 22-24°C. This is crucial for the fat to melt beautifully and the aromas to be fully released.

  • Drink: An excellent partner for a cold glass Brouwhoeve Pilsener, a dry white wine (Rueda) or a young red wine (Joven).

  • Combination: Serve with Picos de Pan and a few drops of the Troncal Coupage olive oil for the ultimate experience.

  • Feature: Green Label (free-range); minimum 50% Ibérico breed; Whole leg; 8 to 9.5 kg pure craftsmanship.


What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.

Consumption & storage advice

Store: Store whole hams in a cool, dry place. Remove the protective cover immediately after receipt. For deboned (deshuesado) or sliced variants is storage in the refrigerator recommended.

Serving: Slice the ham in thin slices. Use the removed fat to the cut surface af to cover against drying out. For the best flavour, serve at room temperature (approx. 22°C).

Tip: Begin with slicing on the narrow side (the 'babilla') as the ham not immediately in short time consumed is.
