Aroma A fresh and enticing bouquet. The sparkling notes of dried meat and mild grains are immediately recognisable, beautifully complemented by aromas of light spices and the characteristic, pure scent of the maturation rooms that pleasantly stimulates the nose.

Flavour The mouthfeel is smooth, creamy due to the marbling, and extremely balanced. On the palate, layers of mild umami and a vital softness unfold, creating a striking balance between the savoury maturation and a vital, melting fat structure. The purity of the Ibérico breed beautifully supports the richness, with the meaty nuances harmoniously lingering.

Finish A medium-length, crystal-clear finish. The savoury notes gradually fade away, making way for a clean memory of pure craftsmanship and a refined, silky finish.


Serving tips & combinations

  • Slicing: Use a stable ham holder and a razor-sharp knife. Cut paper-thin slices about 4-5 cm long. Ensure that each slice has a small edge of fat for the vital flavour.

  • Temperature: Always serve at room temperature (22-24°C). The fat should start to glisten; only then will the aromas be fully released.

  • Drink: An excellent partner for a cold glass of Brouwhoeve Pilsener, a young white wine like a Rueda, or a fresh Sherry (Fino).

  • Combination: Serve with the Picos de Pan and a good olive oil like the Troncal Coupage.

  • Feature: White Label (Etiqueta Blanca); minimum 24 months aged; Whole leg; 8 to 9.5 kg of pure pleasure.


What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, ages longer, and offers a subtle, complex flavour experience with a higher meat yield. The smaller Paleta ages for a shorter time but is loved for its more intense, powerful flavour Because the meat is closer to the bone. 

While the Jamón is the ultimate choice for connoisseurs and large gatherings, the more affordable Paleta is perfect for those looking for a characterful ham for smaller use.

Consumption & Storage Advice

Storage: Store whole hams in a cool, dry place. Remove the transport packmaturation ash soon ash possible after receipt. For boneless (deshuesado) or hand-sliced (loncheado) variants, refrigeration is recommended to maintain maximum quality.

Serving: Slice the ham into paper-thin slices for the best flavour experience. Use the excess fat to cover the cut surface so the ham does not dry out. Always serve at room temperature (about 22°C).

Tip: Start slicing from the narrow end (the 'babilla') if you do not plan to consume the ham in a short time.
