Brouwhoeve Ibérico Jamón de Cebo is an ode to the pure quality of the Ibérico breed in an accessible form. While Bellota varieties are more intense in their nutty notes, this Cebo ham offers impressive suppleness and a mild, meaty tasting experience. 

The result is uniform, glossy slices with a recognisably silky feel thanks to the characteristic marbling of the Ibérico pig. The combination of careful grain feeding and natural ageing in the mountain air creates the ultimate balance between savoury meat aromas and a lively, creamy finish.

¨What is the difference between Jamón and Paleta: Jamón is the hind leg of the pig and offers a subtle flavour with a high meat yield due to the longer ageing. Paleta is the smaller front leg, which matures faster and has a more intense, more powerful flavour.¨

Jamón de Cebo is considered by connoisseurs to be the sweet spot for anyone looking for the authentic texture of Pata Negra at a sharp price. Marked with the official White Label, this ham stands for a controlled diet and a carefully managed ageing process. What makes this 100 grams pack special is its clear expression and ease of use; because the ham is machine-sliced with great precision, the slices are ideal for serving straight away or using in luxurious dishes. Although these pigs have not foraged for acorns in the open countryside, they retain the genetic ability to store fat within the muscles (marbling), giving a juiciness that is superior to ordinary hams. Flavour & character

Aroma A fresh and enticing bouquet. Immediately recognisable are sparkling notes of dried meat and mild grains, beautifully complemented by aromas of light spices and the characteristic pure scent of the ageing rooms that pleasantly stimulates the nose.

Flavour The mouthfeel is smooth, creamy and extremely balanced. On the palate, layers of mild umami and lively softness appear, with a striking balance between savoury ageing and the supple fat structure. The purity of the Ibérico meat supports the richness beautifully, while the meaty nuances linger harmoniously.

Finish A medium-long, crystal-clear finish. The savoury notes slowly fade away, giving way to a clean memory of careful craftsmanship and a refined, silky-smooth finish.


Serving tips & pairings

  • Temperature: Very important! Allow the pack to come to room temperature for at least 30 minutes before use. When the slices begin to shine lightly and separate easily, the ham is lively and full of flavour.

  • Use: Perfect on a tapas board, with a luxurious pasta or on a generously filled baguette with a little olive oil and tomato.

  • Drink: An excellent partner for a cold glass of Brouwhoeve Pilsener, a young white wine (such as Rueda) or a light red wine.

  • Combination: Serve with Picos de Pan and a good olive oil such as Troncal Arbequina.

What is the difference between Jamón and Paleta?

The main difference lies in the cut: Jamón comes from the hind leg of the pig, while Paleta comes from the front leg (shoulder). 

A Jamón is larger, matures for longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially prized for its more intense, powerful flavour because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller occasions.

Consumption & storage advice

Serving: For the best tasting experience, we recommend taking the pack out of the fridge 15 to 20 minutes before consumption and allowing it to come to room temperature (approx. 22°C). This lets the fat marbling melt lightly, distributing the flavour evenly.

Storage advice: Because this product is sliced and vacuum-packed, we recommend storing it chilled to guarantee quality and freshness for as long as possible.

Presentation: Packed in a 100 grams blister, ideal for bread, breakfast or as a drinks snack.
