Aroma A rich and enticing bouquet. Immediately recognisable are the sparkling notes of matured meat and acorns, beautifully complemented by aromas of mild paprika, kruidnagel and the characteristic, deep nose of an artisanal bodega that the nose pleasantly stimulates.

Flavour The mouthfeel is smooth, exceptionally creamy and perfectly balanced. On the palate, layers of intense meat flavour and a lively, oil-like sweetness emerge, with a striking balance between the savoury marinade and the lively, melting marbling. The purity of the breed supports the richness beautifully, with nutty nuances that linger extremely long.

Finish An exceptionally long, crystal-clear finish. The boterachtige notes slowly fade away and make way for a clean memory of pure luxury and a refined, silky-smooth finish.

Serving tips & pairings

• Slicing: Use a very sharp knife. Slice the Lomito into short, wafer-thin slices. Thanks to the intense marbling, the slices do not need to be large to deliver enormous flavour impact.

• Temperature: Serve always at room temperature (22°C). Remove the piece at least one hour beforehand from the packmaturation so that the fat can begin to glisten beautifully.

• Drink: A sublime partner for a glass whole red wine (e.g. a Priorat), a cold Brouwhoeve beer of a dry Sherry such as an Oloroso.

• Combination: Serve neat with Picos de Pan. The Lomito is so rich that it needs nothing else.
