The Blade (NITRUM®) The 28 cm blade is made from the producer’s patented NITRUM® steel. This process improves the molecular structure of the steel, resulting in exceptional cutting power. The flexibility is precisely calibrated: firm enough for control, yet supple enough to cut the finest slices.

The Handle (Polyoxymethylene) The handle is made from polyoxymethylene (POM), a material resistant to shocks, abrasion and solvents. The handle is seamlessly connected to the steel by rivets, improving hygiene because bacteria have no gaps in which to settle.

Care Although the knife is dishwasher-safe, we always recommend hand washing this specialist Jamonero knife. Dry the knife immediately after washing with a soft cloth to preserve the refined shine and optimal sharpness of the cutting edge.

Usage tips & pairings

• The slicing technique: Always use a stable ham holder (Soporte Jamonero) and slice with long, calm sawing movements without applying much pressure.

• Safety: Use this knife only for slicing the soft part of the ham; use a sturdier boning knife for cutting along the bone or removing the hard rind.
