The 100% Ibérico Jamón de Bellota DOP Jabugo from Brouwhoeve is an ode to an age-old tradition and an unique terroir. Where other hams mature in modern facilities, this ham undergoes an impressive transformation in texture in the natural bodegas of Jabugo, where the humid mountain air and the specific microflora provide unparalleled depth.

DOP Jabugo Summum: The gold standard

The Jamón de Bellota from Jabugo is considered by connoisseurs to be the absolute sweet spot of global gastronomy. Only the very finest hams that meet the strictest requirements of the Regulatory Council (DOP) receive the "Summum" status. What makes these whole hams so special is their crystal-clear expression of authenticity; the pigs live at an extremely low density in the dehesa, allowing them to eat an enormous quantity of acorns. This is a delicacy that brings the lively energy of thousand-year-old oak forests immediately to your slicing table.

At Brouwhoeve, we appreciate this Jabugo-ham for its monumental character and the silky-smooth mouthfeel. The maturation is a slow, natural process that lasts three to four years, in which the hams are moved through different levels of the bodega to make the most of the changing seasons. It is a product that shows that ham can have a lively and aristocratic character, where complex aromas of dried fruits and autumn woodland blend beautifully with exceptionally low salinity. The combination of the DOP guarantee and the craft of the Maestro Jamonero provides a significantly fuller experience than almost any other ham.

Flavour & character

Aroma A rich and enticing bouquet. Immediately recognisable are the sparkling notes of fresh acorns and roasted almonds, beautifully complemented by aromas of wild mushrooms, earth and the characteristic, deep nose of a Jabugo cellar that the nose pleasantly stimulates.

Flavour The mouthfeel is smooth, exceptionally creamy and perfectly balanced. On the palate, layers of intense meat flavour and a lively, oil-like sweetness (almost like olive oil), in which a striking balance between the delicate salinity and the lively structure of the fat emerges. The purity of the 100% Ibérico breed supports the richness beautifully, in which the Bellota nuances linger extremely long and harmoniously.

Finish An exceptionally long, crystal-clear finish. The rich fruit notes and melting fat slowly fade away and make way for a clean memory of pure perfection and a refined, silky-smooth finish.


Serving tips & pairings

  • Ritual: Slicing a Jabugo is an art form. Use a professional ham holder and make sure the knife cuts wafer-thin slices. The friction of the knife should already gently activate the fat.

  • Temperature: Serve on a plate at a constant temperature of 24°C. At this point, the oleic acid reaches its lively fluidity and the aromas are fully released.

  • Drink: A sublime match with a dry Manzanilla-sherry, a vintage Champagne or a complex Brouwhoeve beer with a light acidity.

  • Combination: Serve only with a little Picos de Pan so as not to mask the flavour of the ham.

  • Feature: DOP Jabugo (Protected Designation of Origin); Summum selection; 100% Bellota; 7.5 to 9 kg gastronomic gold.


What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.

Consumption & storage advice

Whole ham: Store in a cool, dry place. Remove the cotton cover immediately upon receipt.

Sliced or deboned: These formats should be kept refrigerated to preserve maximum quality.

Serving: For the optimum tasting experience, the ham should be enjoyed at room temperature (approx. 22°C). Slice wafer-thin slices for the best experience.

Tip: Start at the 'babilla' (narrow side) if the ham will be eaten over a longer period. For quick consumption (e.g. festive occasions), you can begin at the 'maza' (thick side).
