The Blade (Martensitic stainless steel) The 25 cm blade is made from a special martensitic stainless steel. This type of steel contains a high chromium content, providing excellent resistance to corrosion and great durability of the cutting edge. The flexibility is ideal for “shaving” along the ham, creating those characteristic thin slices.

The Handle (Compressed wood) The handle is made from wood laminates impregnated with resin under high pressure. This makes the handle water-resistant and very hard, while preserving the natural appearance of the wood grain. It is ergonomically shaped for a good grip during prolonged slicing.

Care Because of the wooden handle, this knife is not suitable for the dishwasher. We recommend washing the knife by hand immediately after use with mild soapy water and drying it thoroughly straight away. This prevents the wood from drying out and preserves the shine of the steel.

Usage tips & pairings

• The base: Always use a stable ham holder (Soporte Jamonero) so you can slice safely and evenly.

• Sharpness: Use a sharpening steel regularly to maintain the fine cutting edge of the knife; this ensures you always slice with minimal resistance.

• Presentation: Serve the freshly sliced slices on a lukewarm plate; this helps the fat of the ham melt subtly for an optimal tasting experience.

• Versatility: Although designed for ham, this knife is also excellent for carving larger pieces of roast meat or salmon.
