The Ibérico Jamón Cebo de Campo from Brouwhoeve is an ode to honest Spanish tradition. Where standard “Cebo” (white label) remains indoors, this “Cebo de Campo” offers impressive suppleness thanks to the pig’s freedom of movement in the open air. 

This results in wafer-thin, glistening slices with a deep red colour and a recognisable silky-smooth feel. The hand slicing provides an irregular, artisanal texture that beautifully melts on the tongue. The combination of the natural maturation and the grainsdiet provides the ultimate balance between a mild meat flavour and a lively, creamy finish.

¨What is the difference between Jamón and Paleta: Jamón is the hind leg of the pig and offers a subtle flavour with a high meat yield by the longer maturation. The Paleta is the smaller front leg that matures faster and has a more intense, more powerful flavour.¨

The Jamón Cebo de Campo is considered by connoisseurs to be the sweet spot for anyone seeking the superior quality of the Ibérico pig with an accessible character. What makes this hand-sliced 100 gram pack special is its crystal-clear expression of convenience and luxury; Because the ham is sliced by hand, the lively energy of the fat remains optimally distributed across the slices. This is a delicacy that brings the atmosphere of an authentic Spanish tapas bar directly to your table.

At Brouwhoeve, we appreciate this ham for its balanced profile and silky-smooth mouthfeel. Because of the pig’s movement, the fat is beautifully marbled, providing a juiciness you do not find in ordinary hams. Flavour & character

Aroma A rich and enticing bouquet. Immediately recognisable are the sparkling notes of dried meat and mild grains, beautifully complemented by aromas of field herbs and the characteristic, pure nose of the mountain air that the nose pleasantly stimulates.

Flavour The mouthfeel is smooth, creamy and extremely balanced. On the palate, layers of mild umami and a lively softness, in which a striking balance between the savoury maturation and a lively, vette structure emerges. The purity of the Ibérico breed supports the richness beautifully, in which the nuances of the maturation linger long and harmoniously.

Finish A medium-long, crystal-clear finish. The meaty notes slowly fade away and make way for a clean memory of the Spanish fields and a refined, silky-smooth finish.


Serving tips & pairings

  • Temperature: essential! Place the unopened sachet under a lukewarm tap for 5 to 10 minutes before consumption, or remove it from the refrigerator 30 minutes beforehand. The slices should glisten and separate easily; then is the ham lively in flavour.

  • Presentation: Serve on a white, preferably slightly pre-warmed plate to the melting character of the fat to accentueren.

  • Drink: An excellent partner for a cold glass Brouwhoeve Pilsener, a fruity white wine of a young red wine.

  • Combination: Delicious on zichzelf or with a few Picos de Pan and a good olive oil such as the Troncal Coupage.

What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, matures longer and offers a subtle, complex tasting experience with a higher meat yield. The smaller Paleta matures for a shorter time, but is especially loved for its more intense, powerful flavour Because the meat sits closer to the bone. 

While Jamón is the ultimate choice for connoisseurs and larger gatherings, the more affordable Paleta is perfect for anyone looking for a characterful ham for smaller use.

Consumption & storage advice

Serving: For the best tasting experience, it is essential to remove the sachet from the refrigerator 15 to 20 minutes before consumption and let it come to room temperature (approx. 22°C). The fats then melt slightly, allowing the aromas to be fully released.

Storage advice: Because this product is already sliced and vacuum-packed, refrigerated storage is recommended to preserve optimum quality for as long as possible.

Tip: To bring the slices to temperature faster, hold the closed packmaturation briefly under a lukewarm tap.
