The Ibérico Paleta de Cebo from Brouwhoeve is an ode to the subtle flavours of the Ibérico breed. Because the shoulder is more compact than the hind leg, this paleta offers impressive suppleness and a faster maturation, resulting in a very balanced character. 

The ham has a recognisable silky vibe due to the natural fat infiltration that is so characteristic of the Pata Negra. The combination of high-quality grain feed and artisanal maturation provides the ultimate balance between mild savoriness and a vital, creamy texture.

Flavour The mouthfeel is smooth, creamy, and extremely balanced. Serving tips & combinations

  • Slicing: Use a sharp knife to slice thin, short pieces. Due to the shape of the shoulder blade, a good fixation in the ham holder is essential for a vital slicing experience.

  • Temperature: Serve at room temperature (about 22-24°C). The slices should shine and the fat should be slightly transparent for optimal flavour experience.

  • Drink: An excellent partner for a cold glass of Brouwhoeve Pilsener, a young white wine, or a fresh Sherry (Fino).

  • Combination: Serve with the Picos de Pan and a good olive oil such as the Troncal Arbequina.

What is the difference between Jamón and Paleta?

The main difference lies in the origin: the Jamón is the hind leg of the pig, while the Paleta is the front leg (shoulder). 

A Jamón is larger, ages longer, and offers a subtle, complex flavour experience with a higher meat yield. The smaller Paleta ages for a shorter time but is loved for its more intense, powerful flavour Because the meat is closer to the bone. 

While the Jamón is the ultimate choice for connoisseurs and large gatherings, the more affordable Paleta is perfect for those looking for a characterful ham for smaller use.

Consumption & Storage Advice

Storage: Store whole shoulder hams in a cool, dry place. Remove the protective cover (which is only for transport) ash soon ash possible after receipt. For the boneless (deshuesado) or sliced variants, refrigeration is recommended to maintain optimal quality in the long term.

Serving: Remove the outer layer of fat and slice the ham into small, thin pieces. Although a shoulder ham is slightly more compact due for its bone structure than leg ham, the flavour is very intense. For the best tasto experience, serve at room temperature (about 22°C).
